Flourless Peanut-Chocolate Chip Cookies

What could be better than peanut butter and chocolate put together, a cookie that does not contain flour or butter! Leave it to Martha Stewart to come up with a delicious gluten-free cookie. Last year Martha issued a “holiday cookie” magazine and dedicated an entire section to those looking for health-conscious recipes. These cookies are incredibly easy to make and are now in standard rotation in the Blumenfeld household. Get ready to enjoy a sweet and salty standout


1          cup creamy peanut butter
¾         cup sugar
1          large egg
½         teaspoon baking soda
¼         teaspoon salt
¾         cup semi sweet chocolate chips
½         cup roasted salted peanuts
 
Preheat the oven to 350 degrees and line baking sheets with parchment paper.
Beat peanut butter, sugar, egg, baking soda and salt until well combined. Mix in chocolate chips and peanuts.
Roll dough, about 1 heaping tablespoon at a time, into balls and place 2 inches apart on baking sheets.
Bake for about 14-17 minutes until golden and puffed. Be sure to rotate pans halfway through. Let cool for 5 minutes and then transfer to wire rack.
